At the far end of the valley, at Itramen directly beneath the Eiger, Rolf Bohren and his brother Toni run the small family farm Landwirtschaftsbetrieb Gebr. Rolf & Toni Bohren — and they do so in a way that has become rare today. Rolf is both farmer and butcher: the cattle are raised on their farm, he knows every animal personally, and he oversees the entire process himself, from the stable to the finished product.

The family runs a purebred herd of original Simmental cows with horns. Their grazing grounds stretch from 950 to 1450 metres above sea level: during summer the cattle enjoy the pastures of Itramen and Holzmatten, rich with alpine herbs.

Life on the farm has followed the same rhythm for decades: Toni goes to the stable in the morning, Rolf in the evening — seven days a week. Rolf’s last holiday was in 1986, when he took a week off.

Together with Adi Bohren and Jens Stauffer, Rolf also runs the Eiger Wild-Metzg. The business mainly specialises in game meat, but also processes the calves raised by Rolf and Toni. Slaughtering takes place in facilities at the Grindelwald Terminal — without long transport routes and without middlemen. Just Rolf, his animals, and his craft. From time to time, Rolf also lets our head chef Aurélien help with cutting up the meat and passes on the knowledge he has gathered over many years.

For our kitchen, we mainly source veal from Rolf, and occasionally some of his cheese as well. The Eiger Wild-Metzg also regularly supplies high-quality meat products from Grindelwald for our restaurant.
